Strawberries. It’s impossible to resist to the temptation of throw an handful of it in some batter! So I improvised this little cake with what I had in my pantry…
Strawberries and chocolate cake
Ingredients for a 18 cm pan:
180 g fresh strawberries
125 g whole yogurt (plain or vanilla)
125 g all-purpose flour
1 big egg
75 g sugar
60 g dark chocolate
25 g sunflower seeds oil
8 g baking powder
Chop roughly the chocolate and set apart. Wash and dry the strawberries and cut them in pieces. Set apart too.
In a bowl beat the egg with the sugar with an electric whisk for a few minutes. Add the oil and then the yogurt.
Sift together the flour with the baking powder and add them to the batter. In the end add the chopped chocolate and the strawberries, keeping some piece apart for the decoration.
Pour the batter into the greased and floured pan, distribute all over the remaining strawberries. Bake at 180°C for about 30 minutes. Let cool down for 10 minutes into the pan, then transfer on a wire rack. Keep under a bell jar for 2 days.
